In this investigation sarnples of preserved cured rneat products
were collected frorn different leddah rnarkets in five replicates. These include:
basterrna, beef rnortadella with different kinds of spices, srnoked
beef loaf, srnoked turkey roast and sausage. These products were analyzed
for different pararneters of rnicrobiological quality. These determinations
include: total rnicrobial flora, thermoduric rnesophilies, thermophilic
anaerobes, acid producing bacteria, coliforrn bacteria, Salmonella and
Shigella.
Considerable differences in the total rnicrobial density were observed in
different cured rneat products. Beef rnortadella with pistachio showed outstanding
higher rnicrobialload cornpared to other products, followed by
beef rnortadella with pepper and sausage. The lowest rnicrobial count was
observed in basterrna. Most of the rnicrobial flora of preserved cured rneat
products were thermolabile organisrns while thermophiles were of rninor
irnportance. Acid producing rnicroorganisrns were detected in varying densities.
These preserved rneat products were found to harbour considerable
densities of rnicroorganisrns able to grow on MacConkey rnediurn, arnong
thern lactose ferrnentors were predorninant. However, non-lactose fermentors
appeared in cornparatively high density. The presence of enteric pathogens
was again observed by plating on S-S agar. This study indicates that all
exarnined cured rneat, except srnoked turkey roast, contained high density
of Salmonella-Shigella |
